Now when you want them now and you want them to be conversant with Spanish, you have a problem.
We found our first man but felt equally sunk, when his knees would not take the strain in June!!
We had to find a replacement and to everybody's delight came up with a Spanish speaking replacement with the correct Michelin procedures and 5 Star experience.
Well the man was good but not the standard that the boss liked, so we had to go on the search for a very special guy. We even had to get him to do a trial in Spain before the bosses favourite chef. You guessed it, we found yet another. This guy was the head of a string of ships and we managed to secure him for this one yacht. 3 Spanish speakers in 6 months and all with Michelin credentials.
He was French and he spoke some Spanish. He was even trained at 3 Michelin Starred The Waterside in Berkshire for a few years.
Now we have to admit that we cannot always meet the bill. We had the head chef of a 3 Michelin star one day and could not place him just because he liked a cigarette after work!!!
So if your boss likes El Bulli, The French Laundry, or The Waterside Inn, it goes to reason, go to the people who have been there for a lot of their staff.
